Few of us think of food as having a history.
It just appears, magically disconnected from the people who produce, process, and serve it.
Our modern food system encourages us to ignore the connections between what goes into our mouths, how it gets there, and who produces it.
. . . As consumers, we simply benefitted - in the form of affordable and abundant food - from the cheap labor of others.
